Omakase Sao Paulo: the search ends at Sushi Vaz. The buzzing city of Sao Paulo, already known for its vibrant food scene, now adds another gem to its crown with Sushi Vaz. This humble sushi establishment along Avenida Santos has quickly become the go-to place for the most authentic Omakase dining experience in town.
The Essence of Omakase in Sao Paulo
Omakase, for the uninitiated, is a unique dining experience where the chef presents a series of plates, starting from the simplest and gradually advancing to the more flavourful and complex dishes. The essence of Omakase is the trust between the customer and the chef. At Sushi Vaz, Chef Vaz translates this trust into an extraordinary culinary adventure that speaks volumes of his expertise and passion.
Sushi Vaz’s menu changes regularly, depending on what ingredients are at their best on the day. Every plate is not just a meal but a journey into the depths of Japanese cuisine, making Sushi Vaz the best Omakase in Sao Paulo.
All the fish there is super fresh and delicious. Is one of those places you can sit in the counter and ask all of your foodie questions to the Chef. They create a really comfy and trustworthy vibe there.
Last time I was there, I sat on the counter and the Chef asked me and my boyfriend if we had any fish restrictions, like usual. We said that we did not like the Serra Fish very much (we’ve just eaten in some other place and it was a little too fishy for our taste). Two minutes later, Chef places 2 big slices of Serra Fish in our little plates and says “I bet you’ll like it here”. Of course, he was right: the fish was delicious (and we got to eat it 2 times!).
We’ve also learned about the real wasabi (chef kindly gave us a taste after it arrive), had a look on the tuna’s ID tag (it had came all the way from the Balearic Islands) and had the most amazing good time.
Sushi Vaz: A Symphony of Flavors
Nestled in the busy Santos avenue, Sushi Vaz could easily be missed by a casual passerby. However, those in the know understand that the unassuming facade hides an authentic Omakase Sao Paulo experience unlike any other.
Inside, the decor is minimalistic, creating a tranquil atmosphere that allows the food to take center stage. You can enjoy an intimate view of Chef Vaz’s expertise as he masterfully prepares each dish. The rhythm of his knife and his meticulous attention to detail is a sight to behold, almost as captivating as the food itself.
The place is tiny, with counter seats for 8 people and a little side table for two. Reservations are mandatory, specially at Avenida Santos unit. They also have a bigger unity in Pinheiros that opens only for dinner – but the Avenida Santos one has way more charm and will truly make you feel like you are in Tokyo.
The Omakase menu, which changes daily, is a reflection of Chef Vaz’s mastery. From fresh sashimi to the perfectly seared toro (fatty tuna), every dish is a masterstroke, a harmonious balance of flavors and textures that will leave your palate longing for more.
